Organized by Délifrance, the Sandwich World Cup took place on 14 February 2012 at the Paris-based School of Bakery and Pastry.
Three students of Le Cordon Bleu took part in this contest: Yukiko Ogata of Le Cordon Bleu Tokyo, Darren Chin (Malaysia) and Thomas Bassoleil (France, Brazil) of Le Cordon Bleu Paris.
Yukiko Ogata came second, while Darren Chin won the contest.
The sandwich submitted to the jury had to meet a certain number of gastronomic criteria, namely: the combination of flavors, the quick preparation, the ease of consumption, the nutritional conditions and the cost price.
Yukiko prepared a sandwich made of marinated sardines, zucchini, sundried tomatoes, shiso and cottage cheese. To decorate her sandwich, she made a patchwork of sardines and zucchini which she laid inside the sandwich. Yukiko served the sandwich with lotus roots. This ingredient is used to celebrate the New Year in Japan. The holes in the root symbolize longevity and hopes for the future.
Darren sought to demonstrate how the European influences were still present in Southeast Asian cuisine. He prepared a marinated pork-based sandwich with herbs and spices, decorated with julienne-sliced vegetables. Darren served this sandwich with a small julienne-sliced salad with tonka sauce in a bamboo basket. After his victory, he said: “What I really wanted to show is how the techniques I’ve learned at Le Cordon Bleu can be used naturally with Asian ingredients. I am extremely proud of having participated in this contest, not only for my country but also for Le Cordon Bleu. I’d like to thank especially Chef Lesourd who coached me for the contest, Chef Poupard for his support as well as my friends at the school Ensan Wong, Thomas Bassoleil and Hubert Ly”.
The Sandwich World Cup, which was organised by cafe-bakery chain Delifrance, took place on Feb 14 at the Paris School of Bakery and Pastry, and eight international entrants presented their sandwiches before a panel of international culinary experts.
The sandwiches presented in the competition had to meet certain criteria, including flavour association, speed of preparation and ease of assembly and consumption as well as “nutritional and cost price”.

Darren Chin, étudiant à l'école Le Cordon Bleu Paris,
grand gagnant de la Coupe du Monde Délifrance du Sandwich.
La Coupe du Monde du Sandwich, organisée par Délifrance, s’est déroulée le 14 février 2012 à L’école de Boulangerie et de Pâtisserie (EBP) à Paris.
Trois étudiants de l’école Le Cordon Bleu ont participé à cette compétition : Yukiko Ogata du Cordon Bleu Toyko, Darren Chin (malaisien) et Thomas Bassoleil (franco-brésilien) du Cordon Bleu Paris.
Yukiko Ogata s’est vue attribuée la deuxième place et Darren Chin a été élu grand vainqueur de cette compétition.
Le sandwich à présenter au jury devait répondre à un certain nombre de critères gastronomiques, à savoir : l’association des saveurs, la rapidité de préparation et d’assemblage, la facilité de consommation, les conditions nutritionnelles et le coût de revient.
Yukiko a préparé un sandwich à base de sardines marinées, de courgettes, de tomates confites, de shiso et de fromage frais. Pour décorer son sandwich, elle a réalisé un patchwork de sardines et de courgettes qu’elle a déposé à l’intérieur de celui-ci. Yukiko a accompagné son sandwich de racines de lotus. Cet ingrédient est utilisé pour célébrer le nouvel an au Japon. Les trous dans la racine représentent la longévité et l’espoir pour l’avenir.
Darren a cherché à démontrer comment les influences européennes continuent à être présentes dans la cuisine de l’Asie du Sud Est. Il a préparé un sandwich à base de porc mariné avec des herbes et des épices, décoré d’une julienne de légumes. Darren a servi ce sandwich accompagné d’une petite salade de julienne et sa sauce tonka dans un panier en bambou. Après sa victoire, il a partagé : « Ce que je voulais vraiment montrer, c’était comment les techniques que j’ai apprises à l’école Le Cordon Bleu peuvent naturellement être utilisées avec des ingrédients asiatiques. Je suis très fier d’avoir participé à cette compétition, non seulement pour mon pays mais aussi pour Le Cordon Bleu. Je tiens particulièrement à remercier Chef Lesourd qui m’a entraîné à ce concours, Chef Poupard pour son soutien ainsi que mes amis de l’école Ensan Wong, Thomas Bassoleil et Hubert Ly. »
